Spicy Peanut Herb Kale Salad

I love a food processor salad! It’s delicate because the kale and herbs are shredded and sliced with a food processor and the salad is ready in minutes.

Ingredients

Herby Kale Salad

  • 8 cups of kale
  • 1/2 serrano pepper or jalapeño, seeded (optional)
  • 1/4 cup chopped cilantro, packed
  • 1/4 cup green onion, 2 tbp whites and 2 tbsp greens
  • 1/4 cup mint
  • 1/4 cup basil

Spicy Peanut Dressing

  • 1/3 cup chunky peanut butter
  • 2 tablespoons of coconut aminos
  • 2 tablespoons of tamari
  • 2 tbsp rice wine vinegar
  • 1/4 cup water
  • 2 garlic cloves minced
  • 1-2 tbsp red pepper flakes

Optional Protein Toppings

  • Dry roasted salted peanuts
  • 8-10oz Grilled chicken, shrimp or salmon marinated in Coconut Ginger Marinade.

Coconut Ginger Marinade (marinade is enough for 2lbs of protein)

  • 1/2 cup coconut aminos
  • 1 teaspoon ground ginger or sub fresh ginger (I love Ginger People)
  • 1 teaspoon sea salt
  • 1/2 Lime, juiced

Directions

  1. Combine all your ingredients for your marinade in a large mixing bowl. Marinate protein for 30 minutes to an hour prior to grilling or roasting.
  2. To create the dressing, whisk all ingredients together except for the water; add water slowly until desired thickness is achieved. * this really depends on the amount of oil in your peanut butter – if your peanut butter is oily, add less water.
  3. Fill your protein and thinly slice for plating.
  4. Wash all of your greens and push them one by one through the food processor on the thin-slice blade. Pour into a salad bowl and toss with peanut dressing.

** If you want to be super efficient you can make the peanut dressing in the bottom of the food processor with the traditional blade and then switch to the thin slice blade slicing all of your ingredients on top of the dressing. Use a silicon spatula to move all of the greens and dressing into a serving bowl and toss to combine.
