- 2 shredded chicken breasts (In a bind? grab an organic rotisserie chicken)
- 2 large avocados
- 4 tbsp of fresh cilantro
- 4 tbsp of fresh chives
- 1 limes
- Pink Himalayan salt
- 2 cucumbers or 4 radicchio
In a large bowl, mix shredded chicken, avocado, cilantro and chives into a chicken salad consistency.
Squeeze the juice of one lime over the chicken salad and sprinkle with 1 tbsp Pink Himalayan.
Slice cucumber or wash and separate radicchio leaves for serving.
Fork a serving onto each cucumber or radicchio leaf.
