Baby Super Greens Salad

This baby super greens salad is simple enough for weeknight dinners but flavorful enough to serve for company.

The homemade dressing makes for a delicious elevation, but it’s still totally easy with only 5 everyday ingredients. Watercress is high in vitamins C and K. Kale and spinach are also good sources of vitamin C as well as minerals like calcium and folate. Avocado provides not only a healthy fat, but plenty of fiber, too.

Together, this greens salad hits three of my Fab Four categories – fat, fiber and greens. Throw a protein on top like seared salmon or sliced chicken breast, and you’ve got a blood sugar balancing and satiating Fab Four meal.

Ingredients

  • 1 cup baby kale
  • 1 cup baby spinach
  • 1 cup watercress
  • ½ avocado

Dressing:

  • 1 lemon, juiced
  • ½ cup champagne vinegar
  • 1 cup avocado oil
  • ½ tsp garlic
  • ½ tsp salt

Directions

  1. In a small shaker bottle or blender mix, lemon juice, vinegar, oil, garlic and salt until emulsified.
  2. In a large bowl, add greens and lightly dress. Toss to combine.
  3. Top with avocado and garnish with lemon. Serve with your protein of choice.
