Does it get more classic than cereal as far as breakfast foods go?

Unfortunately, most cereals are sugar bombs in a box along with containing lots of inflammatory oils and other processed additives. There’s a better way, friends!

I created this healthy cereal alternative for my cereal-loving family. It hardly feels like a compromise they love it so much! It’s made with whole foods only and no refined sugars, crummy oils or gluten/grains. This cereal is full of healthy fats that blunt blood sugar spikes while nourishing the brain and skin.

Here’s how I would pair my Coconutty Cereal to turn it into a satisfying Fab Four breakfast or balanced snack:

  • Add it to the top of Greek yogurt along with a sprinkle of chia seeds and some low glycemic berries

Ingredients

  • 1 cup raw walnuts
  • 1 cup raw pecans
  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup coconut flakes
  • 2 tbsp coconut oil, melted
  • 1 tbsp honey
  • 1/2 cup hemp hearts
  • 1 tsp pink Himalayan salt

Directions

  1. Preheat oven to 220 degrees.
  2. Place the nuts in a food processor and pulse to create small chunks. (Or put them in a sealed, heavy-duty freezer bag and use a mallet to pound them to your desired chunk size.)
  3. In a large bowl, mix coconut oil, honey, coconut flakes, hemp hearts, salt, and nut chunks. Transfer the mix to a baking tray.
  4. Bake for 30 minutes, until the nuts are dry and toasted. Let the mixture cool, and then store it at room temperature in an airtight container.
