Cameron's Arugula Salad

This is a quick and easy side; it deliveries a buttery fatty flavor with a refreshing squeeze of lemon.

  • 1 bag Organic Arugula

  • 3 tbsp olive oil (or avocado oil )

  • 1 tsp lemon juice

  • Pink Salt

  • 2 tbsp Pine Nuts

  • 1 Avocado

  1. In a small bowl, whisk lemon juice and olive oil.

  2. In a large bowl; mix arugula, pine nuts and avocado.

  3. Pour lemon dressing over salad toss to coat, salt to taste.
