Extra Saucy Dip Trio: Garlic Sauce, Cilantro Pesto & Spicy Chipotle

Condiments are the secret to moving a meal from boring to tasty.

Whether I’m using them to uplevel a dinner I’m making for friends or to get my toddler to try a new veggie, condiments are key!

These three condiments hit all the marks: 

  • More protein than store-bought sauces
  • No sugar
  • Healthy fats only (no canola, corn, peanut, vegetable or soybean oil here!)
  • Easy to make in bulk 
  • Stores in the fridge for about a week
  • Offers that delicious pop of flavor we all want in a sauce

These three dips can be used with veggies, on protein, or even diluted as a dressing! I’d use the Spicy Chipotle on a Mexican salad and the Garlic Sauce as a Caesar replacement.

These dips/dressings make the perfect healthy fat component of the Fab Four. Eating this way allows you to ditch dieting while feeling full, calm and energized for hours.

Ingredients

Garlic Sauce:

  • 1 cup water
  • 1/2 cup olive oil
  • 1/2 cup raw almonds (soak 1-2 hrs if desired)
  • 1 tbsp nutritional yeast (omit if the flavor doesn’t suit you)
  • 1/4 cup lemon juice
  • 3 cloves of garlic
  • 2 tsp Bragg liquid aminos or coconut aminos
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp paprika
  • 1/2 tsp salt

Chipotle:

*Same as Garlic Sauce but with 1-2 chipotle peppers in adobo sauce

  • 1 cup water
  • 1/2 cup olive oil
  • 1/2 cup raw almonds (soak 1-2 hrs if desired)
  • 1 tbsp nutritional yeast (omit if the flavor doesn’t suit you)
  • 1/4 cup lemon juice
  • 3 cloves of garlic
  • 2 tsp bragg liquid aminos or coconut aminos
  • 1/2 tsp. cumin
  • 1/2 tsp chili powder
  • 1/4 tsp paprika
  • 1/2 tsp salt
  • 1-2 chipotle peppers in Adobo sauce

Cilantro Pesto:

  • 3 cups cilantro, chopped
  • 3 tbsp jalapeño (1-2 medium), chopped
  • 1 garlic clove
  • 1 cup raw pistachios
  • 1 cup extra virgin olive oil
  • 1 lime, juiced
  • Salt to taste

Directions

  1. Place the ingredients of your desired dip into a food processor or high speed blender and pulse to desired consistency.
  2. I like to start by making the garlic dip and pouring half into a container, then add 1-2 chipotle peppers and re-blend so I get both dips for the week.
  3. Store in separate containers in the fridge for up to a week.

Note: The refrigerator will thicken the sauce so don’t be afraid if it seems too thin.
