Peanut Butter Protein Date Bites

This is an upDATEd version of last years football date bites, and this time they have double the protein thanks to this hack from Cassy Joy. I’ve been making date footballs now for about 5 years. They are the perfect Super Bowl sweet treat without the refined sugar, but when I saw my friend mix her nut butter with my Be Well by Kelly Vanilla Protein Powder I was blown away!

Ingredients

  • 1 serving Be Well by Kelly Vanilla Protein Powder
  • 8-12 medjool dates
  • 1/3 cup of dark chocolate baking chips
  • 1/4 cup peanut butter (or nut butter of choice)
  • 1 tbsp of unsweetened coconut flakes, for topping
  • Maldon sea salt, for topping

Directions

  1. Start by mixing together 1 scoop of Be Well by Kelly Vanilla Protein Powder with your nut butter of choice in a small mixing bowl.
  2. Bring a pot of water to a boil. Add chocolate chips to a large heat safe bowl and place over the boiling water to melt, stirring occasionally.
  3. Remove the pits from the dates and stuff the protein peanut butter mixture into each date.
  4. Coat the dates in the melted dark chocolate. Add 1 coconut flake to each coated date and place onto a parchment paper lined baking tray. Sprinkle with Maldon sea salt and place in the fridge to chill.
