Ingredients

For the Slow-Cooker:

  • 2 large chicken breasts
  • 3 jars Fond Bone Broth (½ jar for slow cooker + 2½ jars for soup)  

For the Stove Top:

  • ½ onion, chopped
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 full box of Chef’s Kiss Protein Pasta (or other high-protein noodles) 
  • 2 jars Fond Bone Broth (for simmering vegetables)
  • 1 handful fresh parsley (stems and leaves separated) 
  • Sea salt and freshly ground black pepper, to taste

Directions

  1. Add the chicken breasts and ½ jar of Fond bone broth to your slow cooker. Cook on low for about 4 hours, until the chicken is tender and just cooked through.
  2. Using two forks, pull the chicken into large, juicy chunks (not too shredded) and set aside.
  3. In a large pot, heat olive oil over medium heat. Add diced onion and cook for 2–3 minutes until it begins to soften. Add carrots and celery and sauté for another 3–4 minutes until lightly tender.
  4. Pour in the remaining 2½ jars of Fond bone broth. Add the parsley stems and the protein pasta. Bring to a gentle boil and simmer until the pasta is cooked through, about 7–9 minutes. 
  5. In a large pot, heat olive oil over medium heat. Add diced onion and cook for 2–3 minutes until it begins to soften. Add carrots and celery and sauté for another 3–4 minutes until lightly tender.  
  6. Pour in the remaining 2½ jars of Fond bone broth. Add the parsley stems and the protein pasta. Bring to a gentle boil and simmer until the pasta is cooked through, about 7–9 minutes.
  7. Remove the parsley stems from the pot. Add the chicken chunks and finely chopped parsley leaves. Stir gently to combine. Season with salt and pepper to taste.
  8. Taste and adjust seasoning as needed. Ladle into bowls and enjoy a nourishing, cozy dinner that’s ready as soon as the family walks in from practice.
