Ingredients

  • 3 boneless, skinless chicken breasts
  • 3/4 cup gluten-free flour
  • 1 tsp salt (divided)
  • 1/2 tsp black pepper
  • 3 large eggs
  •  1 1/2 cups Chef's Kiss Lupin Flakes
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp smoked paprika
  • 3 tbsp avocado oil or Zero Acre oil

Directions

  1. Preheat oven to 400°F (200°C).
  2. Place each chicken breast between two sheets of parchment paper. Pound them to an even thickness (about 1/2 inch) using a meat mallet.
  3. In a shallow bowl, mix gluten-free flour, 1/2 tsp salt, and black pepper.
  4. In a second bowl, beat three eggs.
  5. In a third bowl, combine Lupin Flakes, garlic powder, smoked paprika, and the remaining 1/2 tsp salt.
  6. Dredge each chicken breast in the flour mixture, shaking off excess. Dip into the beaten eggs, letting excess drip off.
  7. Coat thoroughly in the seasoned lupin flakes, pressing gently to adhere.
  8. Heat avocado or Zero Acre oil in a skillet over medium-high heat. Pan-fry each chicken breast for about 1 minute per side until golden.
  9. Transfer the chicken to a sheet pan lined with parchment paper. Bake in a preheated oven at 400°F (200°C) until the internal temperature reaches 165°F (74°C), about 10–15 minutes.
  10. Let rest for a few minutes before serving. Enjoy!
