Ingredients

  • 1 head of cauliflower
  • ½ cup Tahini, divided
  • Juice of 1 lemon
  • 3 tbsp Extra virgin olive oil
  • Generous sprinkle Dukkah
  • Salt and pepper

Directions

  1. Preheat oven to 400. Drizzle cauliflower florets with 1 tbsp olive oil. Season with salt, pepper, and turmeric. Roast for 20-30 minutes until tender and caramelized.
  2. Meanwhile, spread ¼ cup tahini over a serving platter using the back of a spoon.
  3. Make tahini drizzle: combine lemon juice, 2 tbsp olive oil, and ¼ cup tahini.
  4. When cauliflower is finished roasting, plate the florets on the serving platter over the tahini spread. Drizzle with tahini drizzle. Sprinkle generously with dukkah.
