Rachel has become one of my favorite voices in the family food space because she does exactly what I aim to do: make the food your family actually wants to eat and makes it genuinely better without making it complicated.

Her Go-To Nacho Night recipe is the perfect example. It is the kind of meal that gets everyone to the table fast, requires almost no effort, and disappears in minutes. I made it with leftover ground beef from earlier in the week, which is one of the best things about having protein prepped in the fridge. Nacho night becomes a fifteen minute meal.

Here are the simple swaps I made to turn Rachel's nacho night into a Fab Four plate without changing a single thing about what makes it so good.

The Simple Swaps

Siete Grain-Free Tortilla Chips instead of conventional chips.

Siete chips are made with cassava flour and avocado oil and they are genuinely one of the best clean swaps in the snack aisle. They get perfectly crispy, hold up beautifully under all the toppings, and taste so good nobody at the table will know the difference. Find them at most Whole Foods and Target locations.

Greek yogurt instead of sour cream.

Full-fat Greek yogurt has the same cool, creamy texture as sour cream and delivers the same satisfying contrast against the warm nachos. The difference is that Greek yogurt adds protein and probiotics to every bite. A simple swap that nobody notices and everyone benefits from.

Organic cheese.

When it comes to dairy I always reach for organic. The quality of the milk matters and for something we use as generously as melted cheese on nacho night it is worth the upgrade. Look for organic shredded cheddar, Mexican blend, or pepper jack depending on how much heat your family likes.

Leftover ground beef.

This is less of a swap and more of a meal prep hack. If you have seasoned ground beef already in the fridge from earlier in the week, nacho night is ready in fifteen minutes. No extra cooking required. This is exactly why I keep prepped protein in the fridge at all times.

  • Greens: Fresh cilantro, diced tomatoes, and guacamole check the greens box beautifully. Add shredded romaine on top if you want to take it even further. It adds crunch, a fresh contrast to the warm toppings, and a full greens serving that nobody at the table will complain about.

Kelly's Tips

  1. Use leftover ground beef. This is where meal prep light pays off. If you have seasoned taco meat already in the fridge, nacho night is ready before anyone has time to get hungry and cranky. Season extra ground beef any time you make it during the week and this meal is waiting for you.
  2. Layer strategically. Put the cheese directly on the chips before the beef so it melts into every layer. The toppings like tomatoes, guac, Greek yogurt, and cilantro always go on after the oven.
  3. Add shredded romaine. I always add a handful of shredded romaine on top right before serving. It adds crunch, freshness, and checks the greens box on the Fab Four plate without anyone complaining about vegetables at dinner.

Ingredients

  • 1 bag Siete grain-free tortilla chips
  • 1 to 1.5 cups leftover seasoned ground beef, warmed
  • 1 to 1.5 cups organic shredded cheese
  • 1 cup corn, fresh or frozen and thawed
  • 1 cup diced fresh tomatoes
  • Fresh cilantro to taste
  • Guacamole for topping
  • Full-fat Greek yogurt in place of sour cream
  • Optional: shredded romaine, sliced jalapeños, lime wedges

Directions

  1. Preheat your oven to 375 degrees. Line a baking sheet with parchment paper.
  2. Spread the Siete tortilla chips in an even layer across the baking sheet. Scatter the warmed ground beef and corn evenly over the chips. Top generously with the shredded organic cheese.
  3. Bake for 8 to 10 minutes until the cheese is fully melted and the edges of the chips are just golden.
  4. Remove from the oven and immediately top with diced tomatoes, fresh cilantro, and big spoonfuls of guacamole. Add dollops of Greek yogurt where you would normally add sour cream.
  5. Finish with shredded romaine and lime wedges if using and bring the whole tray straight to the table. Enjoy immediately while everything is warm and crispy.
