My boys have been asking for this recipe ever since I made it. This is a quick and easy high-protein meal that will feed the whole family - and so, so delicious!

Ingredients

  • 3-4 top sirloin steaks, super cold
  • 3-4 garlic cloves, grated (1 per steak)
  • 1/2 tbsp whole black peppercorns, crushed in a mortar and pestle or under a glass (1/4-1/2 tbsp per steak)
  • 1 tbsp coconut sugar (maple or honey works here too)
  • 1 tbsp of tapioca, potato or corn starch
  • 3-4 tablespoons of coconut aminos (can also substitute tamari)
  • 1 green or savoy cabbage thinly sliced
  • 1/4  cup rice for serving (or sub cauliflower rice)

Toppings:

  • Green onions, cilantro, and sesame seeds

Directions

  1. Put the steaks in the freezer for 10 minutes prior to cutting.
  2. Slice steak as thin as you can (1/4 inch or less) against the grain, this is what makes it tender.
  3. In a large bowl, add garlic, black pepper, coconut sugar and starch. Add your thinly sliced meat and bring to room temperature while it marinates.
  4. While your steak is marinating, rinse your rice and add 2 parts water and 1 part rice to a large pot. Bring the water to a boil. Once it's boiling, add a big pinch of salt.
  5. Reduce heat to low, cover the pot with a tight fitting lid, and maintain a gentle simmer. Cook until the water is absorbed.
  6. While your rice is cooking, in a cast iron pan over medium high heat, add 1 tbsp of Zero Acre oil (code Kelly for a discount) or a high heat oil/avocado oil.
  7. Add the marinated steak to the pan and fry the meat for 1 minute without moving to create a little char, then add the coconut aminos and stir frequently to cook (~5 minutes).
  8. Once the beef is ready, transfer it to a separate pan and use the empty beef pan to sauté the cabbage for 3-5 minutes until wilted.
  9. Begin by plating your rice and top with wilted veggies and steak. Garnish with cilantro, green onions and sesame seeds. Enjoy!
