Grain-Free Chicken Taquitos

Turn your slow cooker chicken into delicious, grain-free taquitos!

This was a fan favorite for my boys and a great way to get their protein in.

Ingredients

  • 2 6-pack grain-free tortillas (using Siete Foods)
  • 2 chicken breasts
  • 1 can of salsa
  • 2 tbsp avocado oil
  • 1 avocado
  • 1/4 cup cilantro, finely chopped
  • 1/2 lemon or lime, juiced
  • Salt to taste

Directions

  1. Add 1 chicken breast and your favorite jar of salsa to a slow cooker and cook on high for four hours.
  2. After four hours, shred the chicken in the slow cooker making sure to soak up all the juices.
  3. Add a scoop of shredded chicken onto a tortilla, roll up tightly and secure with a tooth pick.
  4. Over high heat, add 1 tbsp of avocado oil and pan fry the taquitos for a few minutes on each side or until crispy. Add more avocado oil to the pan if necessary and continue pan frying until you've used up all the chicken.
  5. To make the guacamole, smash 1 large ripe avocado in a small mixing bowl, and add the juice of a lime or lemon, chopped cilantro, and salt to taste.
  6. Serve the taquitos with fresh guacamole and extra cilantro.
