Auntie Heather recently shared this super simple Protein Breakfast Cookie recipe with me, so Taschen and I decided to whip them up together and they were ready to go as a post nap protein treat and they were a hit. These protein cookies can be a convenient option for breakfast, especially for those with busy schedules or on-the-go lifestyle. Prep a batch the night before and enjoy them in the AM alongside a Fab Four Smoothie, or grab a couple as a post meal treat if you are craving something sweet!

  1. Preheat the oven to 375°F.
  2. Crack one egg into a stand mixer bowl, add the sweetener, and whisk it until the mixture is foamy.
  3. Add flour, protein powder, flaxseed meal and olive oil to the mixer bowl and whisk together.
  4. Hand mix in the Hu chocolate chips.
  5. Line a small baking sheet with parchment paper. Form the mixture into 10 small balls by hand or using a small icecream scoop. Place them onto the baking sheet and then press them down a little.
  6. Sprinkle with coconut flakes, cinnamon and sea salt (all optional).
  7. Bake for 8-12 minutes or until the edges have darkened slightly.
  8. Leave to cool for 5 minutes (they will still be soft) then transfer to a wire cooling rack.
  9. When fully cool, store in an airtight container.
