I'm here to show you that a 'fancy' dinner doesn't have to be complicated or time-consuming.

This pork tenderloin is ready in under 20 minutes to serve up with roasted veggies or a cauliflower mash for the perfect fall weeknight meal. All my seasonings are from Thrive Market, but they also have an Italian blend you can buy if you want to make it even easier and skip that step!

Homemade Italian Seasoning:

  • 1 tbsp parsley
  • 1 tbsp thyme
  • 1 tbsp oregano

  • 1 tbsp pink salt

Directions

  1. Add all your spices to a small mixing bowl and mix together. Dry rub a few tbsp onto both sides of your pork.
  2. Sear the pork in an oven safe pan with some avocado or olive oil to lock in the flavor and juices.
  3. Then, transfer it to a 350 degree oven for 15 minutes or until the internal temperature hits 145/150 degrees Fahrenheit.
  4. Pair this with roasted veggies or a cauliflower mash!
