Fab Four Fish Pockets make it possible for you to prepare your favorite fish, cooked to perfection every time. If you’ve stayed away from seafood because it feels intimidating – or if you’re just looking for a tried and true method for cooking seafood – this is it.

In less than 30 minutes, you can serve a nourishing Fab Four meal. The Fab Four – protein, fat, fiber, and greens – is my loosely structured formula for ensuring blood sugar balance and optimal nutrition. These fish pockets hit every mark:

  • Protein: fish
  • Fat: olive oil
  • Fiber and Greens: veggie of choice, herbs, aromatics

Be Well Tip: When purchasing fish, go with 1) wild caught and 2) unseasoned fish with one ingredient only – fish! If you flip the package over, you’d be shocked at how many fish contain added coloring as well as seasonings, many of which have added sugar and contain MSG.

Ingredients

  • 4 to 6 ounces fish of choice (salmon, halibut, sole)
  • 1 to 2 cups chopped vegetables of choice (zucchini, summer squash, asparagus, Broccolini)
  • 1 tablespoon aromatic of choice (garlic, onion, shallot, chives)
  • 1 tablespoon minced fresh or dried herb of choice (parsley, thyme, sage, herbes de Provence, cilantro)
  • 1 tablespoon fat of choice (olive oil, melted coconut oil, melted butter)

Directions

  1. Preheat the oven to 350°F.
  2. On a large piece of parchment paper, layer the fish, chopped vegetables, aromatic, and herbs. Drizzle with the fat.
  3. Fold or crimp the parchment paper into a sealed pocket. Bake for 20 minutes, or until the fish is cooked through.
  4. Serve in the paper for extra drama!
