High-Protein Cottage Cheese Pasta Bowl (60g Protein)

I have a confession. I recently dropped my meal-prepped protein pasta straight into a half-eaten container of cottage cheese, and it was so good that I'm officially calling it the world's laziest lasagna.
(And no, I'm not pregnant. I promise this craving is completely normal.)

This high-protein cottage cheese pasta has become a weekly staple in our house. Every week, we make a big batch of lupin flour rotini and toss it with a veggie-packed meat sauce. It lives in our fridge all week long, and it saves me more times than I can count.

Hungry kids? We heat up the pasta. Need more protein? We heat up the pasta. Running late from sports practice? It's the easiest dinner ever. Honestly, sometimes I'm eating it at 10 a.m. on a Monday.

Ingredients

For the pasta:

  • 1 box Chef's Kiss lupin flour rotini

For the veggie meat sauce:

  • 1 lb ground beef (or turkey)
  • 1 tbsp olive oil
  • 1 onion, diced]
  • 2 cloves garlic, minced
  • Veggies, such as zucchini, carrots, mushrooms, or spinach, finely chopped
  • 1 jar marinara sauce, low or no added sugar
  • Salt, pepper, and Italian seasoning to taste

For serving:

  • Cottage cheese, about ½ cup per bowl

Directions

  1. Cook the pasta. Cook the lupin rotini according to the package directions, then drain.
  2. Brown the meat. Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up as it browns.
  3. Add the veggies. Stir in the onion, garlic, and chopped veggies. Cook until softened, about [5 to 7] minutes.
  4. Simmer the sauce. Pour in the marinara, season to taste, and simmer for [10] minutes.
  5. Combine and store. Toss the pasta with the meat sauce. Divide into containers and refrigerate for an easy grab-and-go meal all week.
  6. Make it a lazy lasagna. Heat a serving and spoon it over cottage cheese, or stir the cottage cheese right in. Enjoy!
