1 bag organic arugula
3 tbsp olive oil (or avocado oil )
1 tsp lemon juice
2 tbsp pine nuts
In a small bowl, whisk lemon juice and olive oil.
In a large bowl; mix arugula, pine nuts and avocado.
Pour lemon dressing over salad toss to coat, salt to taste.
