Cameron's Arugula Salad

This side is as easy as it gets. But don’t confuse easy with bland, because it absolutely pops with flavor!

Buttery pine nuts, creamy avocado and peppery arugula are tossed in a simple but fresh dressing of olive oil and lemon juice. This is a staple for my family!

I’m typically dishing up some sort of protein at dinnertime for my family – chicken tenders, meatballs, salmon. Beyond the protein, you better believe I’m checking every box of the Fab Four when it comes to plating our meals. It’s my proven method for blood sugar balance, sustained energy, optimal nutrition and ensuring the sensation of being full. That means we need protein, fat, fiber and greens. In addition to a meat (protein!) and some sort of veggie like cauliflower rice or broccoli (fiber!), this little gem of a salad delivers on both the greens and fat, as well as giving an added fiber boost with the avocado.

Arugula, in particular, is high in antioxidants and may even be protective over certain types of cancer. Pine nuts are high in skin-loving vitamin E. And the fats from the olive oil and avocado will ensure optimal absorption of minerals and vitamins.

It’s easy to throw together with everyday ingredients you probably already have in your kitchen. Try this versatile salad as a side for your next meal!

Ingredients

  • 1 bag organic arugula
  • 3 tbsp olive oil (or avocado oil)
  • 1 tsp lemon juice
  • 2 tbsp pine nuts
  • 1 avocado
  • Pink Himalayan salt, to taste

Directions

  1. In a small bowl, whisk lemon juice and olive oil.
  2. In a large bowl, mix arugula, pine nuts and sliced avocado.
  3. Pour lemon dressing over the salad and toss to coat. Salt to taste.
