Lean Beef “Chorizo” and Eggs Breakfast Tacos

What you EAT changes your life. I can’t fully show up for myself, my business, or my kids unless I’m intentional about what’s on my plate.

Intentional eating, rather than just intuitive eating, is key. Each meal I choose influences my energy, mental clarity, and overall abundance. I’m either in the driver’s seat or reacting to whatever snacks are in the pantry.

For me, it’s crucial to consistently eat enough—right now, I’m aiming for 130 grams of protein a day. Starting my day with at least 30 grams of protein is essential for hitting that goal and reaping the benefits that come with a high-protein breakfast.

I refuse to strive for perfection in my eating habits. Instead, I keep it simple with a checklist: Where’s the Fab Four? Amino Acids, Fatty Acids, Fiber—check! This approach provides me with blood sugar stability and nutrient density, all while allowing flexibility in my meals.

Take my Beef Chorizo Eggs Breakfast Taco, for example:

  • Protein: ½ lb beef and 2 eggs (50g + 12g)
  • Fat: Egg yolks and avocado
  • Fiber/Greens: Spinach and cilantro

Ingredients

  • 1/2 lb of grass-fed ground beef
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tbsp tomato paste
  • 2 eggs
  • 2 cup spinach
  • 1/4 avocado, mashed or sliced
  • Cilantro
  • 1 cassava tortilla

Directions

  1. Cook your ground beef over medium heat and break apart into crumbles with the seasoning and tomato paste. Add a handful of spinach to the pan and continue to cook.
  2. Make space in the pan and crack two eggs and fry until cooked. I put a lid on this pan to speed up the cook time of the whites and sometimes I mix them into scrambled eggs.
  3. While your eggs are cooking, heat a tortilla on the stove top over an open flame.
  4. Transfer the ground beef and eggs onto the tortilla and top with sliced/mashed avocado and cilantro.
