The Ultimate Comfort Meal: Hearty Oven-Braised Beef Stew

One of my most requested (and most loved!) recipes is my hearty oven-braised beef stew. It’s a staple in our home, especially during the colder months or whenever we need a little comfort to nurse us back to health. 

This stew is the ultimate comfort food—warm, hearty, and filled with all the nutrients we need. Not only does it taste amazing, but it also checks all the boxes for a well-rounded Fab Four meal: protein, fat, fiber, and greens. Ingredients

  • 2 tbsp tallow, Zero Acre oil, or avocado oil
  • 2–3 lbs stew meat (beef, bison, or lamb)
  • 1 tbsp olive oil
  • 1 cup white onion, chopped
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 1 tbsp garlic powder
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 1 tbsp salt (plus more to taste)
  • 1 tbsp tomato paste
  • 1 tbsp flour of choice (einkorn or gluten-free flour)
  • 12 oz beef bone broth (about 1 ½ cups)
  • Bag of small potatoes of choice

Directions

  1. Preheat your oven to 325°F (163°C).
  2. Heat 2 tablespoons of tallow, Zero Acre oil, or avocado oil in a large oven-safe pot or Dutch oven over medium-high heat.
  3. Working in batches, sear the stew meat on all sides until browned. Avoid overcrowding the pan to ensure a good sear. Remove the browned meat and set it aside.
  4. Add 1 tablespoon of olive oil to the same pot. Add the chopped onion, carrots, and celery. Sauté for about 5–7 minutes until softened.
  5. Stir in garlic powder, cumin, oregano, thyme, and salt. Cook for an additional minute to toast the spices.
  6. Push the vegetables to one side of the pot and add the tomato paste. Cook for about 2 minutes, stirring frequently, to eliminate any metallic taste.
  7. Return the seared meat to the pot with the sautéed vegetables. Sprinkle 1 tablespoon of flour over the mixture and stir well to coat everything evenly. Cook for 1–2 minutes until the flour is fully absorbed and no longer raw.
  8. Pour in the beef bone broth, scraping up any browned bits from the bottom of the pot to deglaze it. Stir everything together.
  9. Add the small potatoes and stir once more.
  10. Cover the pot with a lid and transfer it to the preheated oven. Let it braise at 325°F for about 2½ hours, or until the meat is fork-tender and the flavors have melded together.
  11. Remove from the oven and let cool slightly before serving. Taste and adjust seasoning if needed. Enjoy!
