Healthier Homemade Peeps | Easy DIY Sugar-Free Easter Treat

Is there an Easter treat that’s any more iconic than Peeps?! If you grew up loving those brightly colored marshmallow chicks but now cringe at the realization of what they’re made of, you're in the right place. 

As a lifelong lover of nostalgic treats, I’m on a mission to recreate the classics with a healthier twist. I want my boys to experience the magic of sentimental holiday foods – like Peeps – only with ingredients I can get behind. 

My homemade marshmallow Peeps are an obsession –

  • Every bit as magical as the original version…only made with a lot more love

I’m always looking for ways to balance blood sugar without sacrificing the joy of food, especially during the holidays when sweets seem to be everywhere. My Peeps are sweetened with your option of either honey or allulose. Honey will result in a gentle bump in blood sugar, while allulose will have nearly no effect on blood sugar. 

Whether you're making these Peeps for your kids or your inner child, I promise these little guys are as easy to make as they are fun to eat!

Ingredients

  • 1/2 cup cold water
  • 3 tablespoons gelatin
  • 2/3 cup room temperature water
  • 1 1/3 cup allulose
  • 1/4 teaspoon kosher salt
  • 2 teaspoons vanilla extract
  • Arrowroot powder, for dusting
  • Natural food coloring

Directions

  1. Sprinkle a silicone peeps mold with arrowroot powder. This will help prevent the marshmallows from sticking.
  2. In the bowl of a stand mixer fitted with the whisk attachment (or in a large bowl if using a handheld mixer), pour 1/2 cup of cold water and sprinkle the gelatin over the top, mixing together with a fork. Let it sit for 10 minutes to allow the gelatin to bloom.
  3. In a saucepan, combine 2/3 cups cold water with allulose. Bring to a boil over medium heat, allowing the sweetener to completely dissolve, keeping the mixture at a rolling boil for about 2 minutes.
  4. Turn your mixer on low and slowly pour the hot sweetener mixture into the center of the gelatin mixture (avoiding the sides to keep the mixture from cooling off). After all the sweetener has been added, add the vanilla extract and natural food coloring. Increase your mixer speed to high, and whisk non-stop for about 15 minutes until a thick texture forms.
  5. Quickly pour the marshmallow mixture into the prepared silicone mold and smooth with a spatula. Allow it to sit uncovered at room temperature for 6 hours or overnight.
  6. Once set, pop your Peeps out of the mold. If they are still sticky, toss them gently in arrowroot powder to coat.
  7. Serve immediately, or store any leftovers in an airtight container to keep them fresh.
