Homemade Date 'Snickers Bar' Bites

I had to hop on board the trending snicker bar bites and let me just say, these did not disappoint.

I swapped Chris from Justin’s to Unreal peanut butter cups which lowers the sugar but it still doesn’t have the protein, fat, or fiber to blunt the blood sugar spike - and just 2 Unreal PB cups took my glucose up 30pts! So I decided to try out my own version with the Fab 4 - a large nut butter and peanut filled date aka 'Date Snickers'. These were not only MORE delicious and filling but the addition of fiber (nuts and date) and fat (peanut butter) cut my glucose curve in half - only 17 points on my Levels CGM.

Ingredients

  • 12-15 medjool dates

  • Dry roasted peanuts, for topping
  • 1 tsp Maldon Salt

Directions

  1. Slice and remove the pits from your dates.
  2. Stuff dates with peanut butter or nut butter of choice and add a couple of dry roasted peanuts to each.
  3. Melt your dark chocolate in a heat safe container and place each date into the melted chocolate to coat. Transfer the coated to dates to a parchment paper lined baking tray.
  4. Sprinkle sea salt and freeze for 15 minutes before enjoying!
  5. Store extra in an airtight container for up to 2 weeks.
