Ingredients

  • 2-3 shredded chicken breasts
  • 1/4 cup Primal Kitchen mayo
  • 1/3 cup chopped celery
  • 1/4 cup chopped red onion
  • Salt and pepper to taste
  • 2 tbsp lemon zest
  • Juice of half a lemon
  • 2 tbsp chopped fresh basil
  • Greens of choice or gluten-free/sourdough bread

Directions

  1. Chop your celery, red onion, fresh basil and leftover chicken, and place into a large mixing bowl.
  2. Add lemon juice, lemon zest, and Primal Kitchen mayo to the bowl, stir to combine.
  3. Add salt and pepper to taste. Serve over a bed of greens or on your favorite gluten-free or sourdough bread.
