Grilled Peach Cobbler Recipe

Refined Sugar-Free Grilled Peach 'Cobbler'

Did you know that most peach cobblers require a half to a full cup of added sugar?

This recipe only uses whole foods (2 dates) to sweeten the deal! Special thanks to my Vitamix for helping me food process my nutty date topping and whip up my vanilla coconut cream!

  • 2-4 peaches
  • 1/2 cup walnuts
  • 1/2 cup cashews
  • 1/2 cup almond
  • 2 soaked dates
  • Cinnamon
  • Coconut oil, for cooking

Coconut Cream Topping:

  • 1 tbsp vanilla extract
  • 1/2 cup unsweetened coconut cream

Optional Toppings:

  • Fresh basil
  • 1/4 cup blackberries


  1. Preheat oven to 350 degrees Fahrenheit.
  2. Rinse peaches, and slice in half then remove the pits.
  3. Add 1 tbsp of coconut oil to a grill pan over medium heat.
  4. Place peaches pit side down on the grilling pan for 5-8 minutes until caramelized and grill marks show.
  5. While peaches are grilling, add 1/2 cup of walnuts, cashews, and almonds to your food processor with 2 soaked dates and 1 tbsp of cinnamon to create the crumble topping. Tip: Soak dates for 2 hours to soften or boil them for 10 minutes in a little water before blending.
  6. Flip the peaches and top with the nutty crumble. Transfer to the oven and bake for 15-20 minutes in the oven at 350 degrees. Tip: If your using an outdoor grill or a pan that is not able to go in the oven, place grilled peaches onto a lined baking tray before adding toppings and bake for for 15-20 minutes.
  7. For the vanilla coconut cream, blend 1/4-1/2 cup of coconut cream with 1 tbsp of vanilla extract in a high speed blender to create a fluffy consistency.
  8. Once your peaches are cooked, let cool for a few minutes and scoop coconut cream on top of the peaches and crumble mixture. Top it with fresh berries, basil, and sprinkle with cinnamon. Enjoy!
