Refined Sugar-Free Grilled 'Peach Cobbler'

The Grilled 'Peach Cobbler' is a delicious dessert option that focuses on using nutritious whole-food ingredients to minimize added sugars and unhealthy fats found in traditional Peach Cobblers!

I never want my clients to label food as 'good' or 'bad', but rather gain knowledge about how certain ingredients impact their blood sugar so that they can make informed decisions about their food choices! It's no secret that traditional baked pies aren't the healthiest option, but did you know that most peach cobblers require half to a full cup of added sugar? Not to mention, cobblers are often void of any nutritional value. 

Desserts that are high in refined sugar and carbohydrates are digested quickly, leading to spikes in blood glucose. This can result in both short-term and long-term effects on your health. In the short term, you may experience a 'high' directly after eating, followed by a hard crash that can lead to poor food decisions later on. Long-term, regular consumption of refined sugar and carbohydrates has negative effects on heart health and overall well-being.

The Refined Sugar-free Grilled Peach Cobbler is made with real peaches and dates to sweeten the deal sans the added sugar (Special thanks to my Vitamix for helping me food process my nutty date topping and whip up my vanilla coconut cream!). It is the perfect summer recipe when peaches are in season and you want something fresh and simple for dessert. It is not only delicious but also packed with nutrients from fresh peaches and other wholesome ingredients, making it the perfect treat for satisfying your sweet cravings without guilt during the summer months.

Ingredients

  • 2-4 peaches
  • 1/2 cup walnuts
  • 1/2 cup cashews
  • 1/2 cup almond
  • 2 soaked dates
  • Cinnamon
  • Coconut oil, for cooking

Coconut Cream Topping:

  • 1 tbsp vanilla extract
  • 1/2 cup unsweetened coconut cream

Optional Toppings:

  • Fresh basil
  • 1/4 cup blackberries

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Rinse peaches, and slice in half then remove the pits.
  3. Add 1 tbsp of coconut oil to a grill pan over medium heat.
  4. Place peaches pit side down on the grilling pan for 5-8 minutes until caramelized and grill marks show.
  5. While peaches are grilling, add 1/2 cup of walnuts, cashews, and almonds to your food processor with 2 soaked dates and 1 tbsp of cinnamon to create the crumble topping. Tip: Soak dates for 2 hours to soften or boil them for 10 minutes in a little water before blending.
  6. Flip the peaches and top with the nutty crumble. Transfer to the oven and bake for 15-20 minutes in the oven at 350 degrees. Tip: If your using an outdoor grill or a pan that is not able to go in the oven, place grilled peaches onto a lined baking tray before adding toppings and bake for for 15-20 minutes.
  7. For the coconut cream topping, blend 1/4-1/2 cup of coconut cream with 1 tbsp of vanilla extract in a high speed blender to create a fluffy consistency.
  8. Once your peaches are cooked, let cool for a few minutes and scoop coconut cream on top of the peaches and crumble mixture. Top it with fresh berries, basil, and sprinkle with cinnamon. Enjoy!
