Sweet & Salty Walnut Butter

Three ingredients is all it takes! Sweet and salty, smooth and creamy – your new favorite nut butter will be better for both your wallet and your body.

You never need to buy expensive nut butters again. Purchase a big bag of raw walnuts (but you could also do pecans, almonds, or cashews!) and keep them in the freezer to ensure they don’t go rancid. Pull them out and pulse them until creamy whenever you want the freshest, yummiest nut butter of your life.

Most nut butters you’ll find in the grocery store contain added inflammatory and hydrogenated oils as well as added sugars. This is a recipe for inflammation and blood sugar dysregulation. When you make your own nut butter, you get to control the ingredients. And in this case, they are minimal, healthy and delicious.

Here are some of my favorite ways to enjoy nut butter:

The healthy fat from the walnut will blunt a blood sugar spike you might otherwise have if you were to eat a muffin or piece of toast without a healthy fat component. That’s the beauty of the Fab Four – you don’t need an extreme diet or to cut out the foods you love! You just need my fourfold formula to balance your blood sugar, up your energy, fight your cravings, and feel your best!

  • 1 cup of frozen raw walnuts (when you process frozen nuts you keep them from heating which preserves the anti-inflammatory oils present in the nuts)
  • 1 tsp sea salt
  • 2 tsp honey

Directions

  1. Pulse nuts and 1 tsp honey in a food processor until a ball of butter forms.
  2. Add 1 tsp of salt to processor
  3. Scoop into a bowl and hand mix 1 tsp of sea salt. Optional, add an additional tsp of raw honey to sweeten and hand mix to combine.

Be Well Tip: Use this to make any type of nut butter you love! Consider mixing in two type of nuts I.e. walnuts and cashews or almonds to diversity your diet.
