Remember hamburger helper? The cowboy skillet is my Fab Four version of that and it makes for a quick and balanced lunch or dinner!

I love this recipe because it is so versatile. If you don't have ground beef on hand, here are some other flavor combinations I love to throw together:

  • Turkey with zucchini and squash + Italian spices
  • Chicken with peppers and onion + garlic/onion
  • Pork with carrot and cabbage + sesame seeds

Ingredients

  • 1lb ground beef
  • 1 tablespoon smoked paprika
  • 1 tbsp chili powder
  • 1/2 tbsp garlic salt
  • 1 tablespoon Primal Kitchen ketchup
  • 2 tablespoon coconut aminos
  • 1 (12-ounce) bag organic cauliflower rice
  • 1-2 cups broccoli, finely chopped
  • 4-8 cups fresh spinach
  • 2 tbsp nutritional yeast (optional)

Directions

  1. Place ground beef in a large skillet and cook over medium-high heat until browned and cooked through, 7 to 10 minutes, breaking it into smaller pieces with a wooden spoon as it cooks.
  2. Add the paprika, chili powder, ketchup, coconut aminos, cauliflower rice, and broccoli to the meat in the skillet. Stir to combine and cook until heated through, 3 to 4 minutes.
  3. Once cooked through, add the spinach and cook until lightly wilted. Serve warm.
  4. For a cheesy flavor, sprinkle the nutritional yeast on top (if using).
