Buffalo Ranch Chicken Salad Airfryer Recipe

I love having only one thing to clean instead of my rice pot, bean pot, and chicken pan.

This meal only took 15 minutes and it was enough food to feed the whole family - which we need because my boys expect a mountain of food on their plate. If you don't have a Ninja Speedi, you can still whip up this recipe in under 30 minutes.

Ingredients

Salad Ingredients:

  • 1-2 cups romaine lettuce
  • 1/2 cucumber - sliced
  • 2 Tomatoes - sliced
  • Cilantro

Directions

Ninja Speedi Method:

  1. Rinse your beans and rice in a strainer, then transfer to the bottom section of your Ninja along with 2 cups of water.
  2. Coat your chicken breasts in your desired amount of Primal Kitchen Buffalo Sauce.
  3. Add chicken breasts to second tier of the Ninja, along with veggies of choice (I used bell peppers, sliced). Then, set your Ninja to speedi meals and cook for 15 minutes.
  4. While your chicken, rice, and beans are cooking, chop salad ingredients - we love cilantro, tomatoes, romaine, and cucumbers but you can use whatever greens you have on hand.
  5. Place your salad ingredients in a bowl and drizzle with Primal Kitchen Ranch.
  6. Once your chicken is ready, chop into bite-sized pieces and add to your salad along with a 1/2 cup of rice, beans, and your desired amount of bell peppers. Top with cilantro, and enjoy!

Alternative Method:

  1. In a large saucepan or Dutch oven with a tight-fitting lid, bring 2 cups of water to a boil. Add rinsed rice and beans to the boiling water, stir just to combine, then cover. Turn the heat down as low as it will go, then let simmer, undisturbed, for 18 to 20 minutes.
  2. Set your oven to 400 degrees.
  3. Coat your chicken breasts in your desired amount of Primal Kitchen Buffalo Sauce.
  4. Place chicken breasts and chopped bell peppers on a parchment lined baking sheet and bake for 20 minutes.
  5. While your chicken, rice, and beans are cooking, chop salad ingredients - we love romaine, tomatoes, and cucumbers but you can use whatever greens you have on hand.
  6. Place your salad ingredients in a bowl and drizzle with Primal Kitchen Ranch.
