Fab 4 Egg Roll in a Bowl

We are all super busy throughout the day, but taking the time to make a warm, satisfying lunch can keep you from mindlessly snacking in the afternoon.

With only one pan, you can whip up a delicious meal in no time. This is one of the fastest easiest lunches (or dinners) you can make for you and your family. It incorporates cabbage, herbs, micro greens and broccoli slaw, all the veggies that aren’t often purchased so it is a great way to increase the variety of what you eat, too!

Ingredients

  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 1 tbsp ginger, minced
  • 1 pound of ground protein (pork, chicken or turkey)
  • 1 tsp salt
  • 3-4 tbsp coconut aminos
  • A half a bag of broccoli slaw
  • 1 small cabbage, shredded
  • Toppings: Cilantro, green onion and/or basil

Directions

  1. Add olive oil to a pan and sauté the onions and garlic until translucent and aromatic.
  2. Add ground protein to the pan and season with salt. Cook until it crumbles, and drain off most of the liquid.
  3. Add ginger and coconut aminos to the pan, and mix together.
  4. Top with all your shredded veggies and cover to steam. Lift the lid and mix every minute or so.
  5. Once the veggies are done to your liking, transfer to a bowl. Top with herbs like green onion and cilantro, micro greens (I added radish) and Sriracha.
