Fab 4 Moroccan Meatballs

Fab Four Moroccan Meatballs work as an appetizer, a protein-rich snack, or a crowd-pleasing main for a meal. This is a go-to dish I bring for potluck gatherings, too!

Meatballs are a staple in my home because they’re easy and versatile. All you need is a high quality ground protein. My favorites are from Butcher Box and Force of Nature (use code KELLY10). Add some ground flaxseed and seasonings from Thrive Market, and I’m meatball making ready!

Yes, you heard that right. The key ingredient in my meatballs is ground flax seed, or flax meal. I use it in place of breadcrumbs in order to increase the fiber content and create a uniform consistency. Just one serving of flax seeds provides extra protein, fiber, and omega 3 fatty acids.

Ingredients

  • 3 lbs of grass-fed ground beef
  • 2 eggs
  • 3 garlic cloves, minced
  • 1/4 cup red onion, diced
  • 1/4 cup chopped parsley, fresh 
  • 1/4 cup chopped mint, fresh
  • 1 tbsp coriander
  • 1 tbsp cumin
  • 1 tbsp pink salt
  • 1/4 cup of flax meal

Directions

  1. Preheat oven to 350° Fahrenheit.
  2. Finely dice the onions, parsley and mint.
  3. In a large bowl, add ground beef, eggs, seasonings, onion, garlic, herbs and flax meal, and hand mix to combine.
  4. Roll into meatballs ~1-2 inches. Repeat until you use up all the meat.
  5. Place the meatballs on a parchment paper lined baking sheet pan and bake for 15-20 minutes. Use an instant read thermometer to confirm meatballs are fully cooked (160° F internal temperature).
  6. Let rest for 5 minutes before serving.
