Fab 4 Moroccan Meatballs

Filling and full of nutrients, this is one the whole family will love. Perfect as an appetizer for family gatherings or a potluck!

Meatballs are a staple in my home and it is because they are so easy and versatile. All you need is a high-quality ground protein - my favorite are from Butcher Box* and Force of Nature (use code Kelly10 for 10% off your first order) and whatever seasonings you have on hand. The key ingredient in this recipe is flax meal or ground flax seeds in place of breadcrumbs to increase the fiber content and create a uniform consistency. Just one serving of flax seeds provides extra protein, fiber, and omega-3 fatty acids.

You can serve these with your favorite sugar-free condiments, Harissa sauce or my homemade Zhoug sauce.  For a complete Fab Four Moroccan meal, pair these with a side of roasted eggplant or my Mediterranean Salad.

Ingredients

  • 3 lbs of grass-fed beef
  • 2 eggs
  • 3 garlic cloves minced
  • 1/4 cup red onion diced
  • 1/4 cup chopped parsley, fresh 
  • 1/4 cup chopped mint, fresh
  • 1 tbsp coriander
  • 1 tbsp cumin
  • 1 tbsp pink salt
  • 1/4 cup of flax meal*

 

Directions

  1. Pre-heat oven to 350 degrees.
  2. Add the meat and seasoning a large bowl and hand mix into meatballs, 1-2 inches big.
  3. Place the meatballs on a lined baking sheet pan and bake for 20-30 minutes.
