Protein-Packed Pumpkin Spice Muffins

Pumpkin spice and everything nice for blood sugar balance! These Protein-Packed Pumpkin Spice Muffins aren’t your average baked good. They taste like a treat, but have little to no effect on blood glucose (mine only went up 3 mg/dl on my Levels CGM after two muffins)!

How did I achieve this? By adding a scoop of my plant-based protein powder into the batter! Adding my protein powder into your baked goods seamlessly increases fiber and protein content, which elongate the blood sugar curve and blunt any spikes. With this simple hack, you can have your cake (or muffin) and eat it, too!

This is why I’m so passionate about the Fab Four – protein, fat, fiber, and greens! By using these components to finesse the macronutrient profile of your food, you can still satisfy your cravings but with a completely different effect on the body. No big blood sugar spikes followed by crashes and cravings. 

The Fab Four is all about food freedom, but not at the expense of your health. You never have to feel deprived. But you also shouldn’t feel hangry and out of control around food either. It is possible to eat in a way that honors your brain and body, and your taste buds, too!

Ingredients

  • 2 scoops of Be Well By Kelly Vanilla Plant-Based Protein Powder (or 1 scoop Vanilla and 1 scoop Unflavored for a less sweet alternative)
  • 3 eggs
  • 1 cup of pumpkin
  • 3/4 cup of almond flour
  • 1 tbsp vanilla extract
  • 1 tbsp pumpkin pie spice or cinnamon
  • 1/2 tsp of baking soda or powder
  • 1/2 tsp salt
  • Primal Kitchen avocado oil spray, for cooking

Directions

  1. Preheat oven to 350 degrees.
  2. Add all the ingredients to a bowl, whisk together to create your batter.
  3. Lightly grease your baking tray with avocado oil spray or line with cupcake tins and pour the mixture in. This made 8 muffins or you can use a smaller tray for more!
  4. Bake your muffins for 20-22 minutes.
  5. Let cool for 5 minutes, and enjoy with ghee or almond-butter!
