Protein-Packed Pumpkin Spice Muffins

Pumpkin spice and everything nice for blood sugar balance!

I've been loving to add a scoop of my plant-based protein powders into baked goods to seamlessly increase my fiber and protein content. These high-protein muffins taste like a treat, but will have little to no effect on your blood glucose (mine only went up 3mg/dl on my Levels CGM after two muffins)!

Ingredients

  • 2 scoops of Be Well By Kelly Vanilla Plant-Based Protein Powder (or 1 scoop Vanilla and 1 scoop Unflavored for a less sweet alternative)
  • 3 eggs
  • 1 cup of pumpkin
  • 3/4 cup of almond flour
  • 1 tbsp vanilla extract
  • 1 tbsp pumpkin pie spice or cinnamon
  • 1/2 tsp of baking soda or powder
  • 1/2 tsp salt
  • Primal Kitchen avocado oil spray, for cooking

Directions

  1. Preheat oven to 350 degrees.
  2. Add all the ingredients to a bowl, whisk together to create your batter.
  3. Lightly grease your baking tray with avocado oil spray or line with cupcake tins and pour the mixture in. This made 8 muffins or you can use a smaller tray for more!
  4. Bake your muffins for 20-22 minutes.
  5. Let cool for 5 minutes, and enjoy with ghee or almond-butter!
