My kids hate mushy squash, spit it out, will not eat it, nice try mom….but they will eat this fresh zucchini salad all day long!
So many times as parents we anticipate what our kids are going to love/hate and sometimes the simplest recipes end up being their favorite.… so here is a little inspo to mix it up and hopefully sneak in some extra vegetables into you and your kids diets.

Raw Squash and Asparagus Salad

Ingredients
- 1 summer squash, diced
- 1 zucchini, diced
- 1/2 bunch asparagus, diced and the top florets are halved
- 2 tbsp dill, chopped
- 2 tbsp, lemon basil, chopped
- 1 garlic clove, minced
Dressing:
- 1 lemon, juiced
- 1/2 cup olive oil
- 1 tsp salt
- 1/2 tsp pepper
Directions
- Juice one lemon into a small mixing bowl with 1/2 cup olive oil, salt and pepper and whisk together to create your dressing
- Dice your zucchini, squash, and asparagus into small pieces and set aside
- Add 1 minced garlic clove on top of chopped vegetables for 10 minutes (this enhances the potent anti-cancer benefits from the garlic)
- While the garlic is resting, chop up your herbs and add on top of the chopped vegetables
- Pour the dressing on top of the vegetables and mix until combined
