Healthy Strawberry Basil Electrolyte Popscicles

With warmer weather around the corner, there's nothing quite like a refreshing popsicle to beat the heat. However, many store-bought options are laden with sugar and artificial additives. Luckily, making your own popsicles at home is simple, fun, and allows you to control the ingredients.

I am always thinking of ways to recreate the foods I enjoyed as a kid and turning them into a sugar-free version with some extra health benefits! These Strawberry Basil Electrolyte popscicles are made with real fruit, fresh herbs, and my favorite electrolyte mix to keep this recipe sweet without the added junk. Ingredients

  • 2 cups of water
  • 2 cups of fresh strawberries
  • 1/4 cup basil leaves, loosely packed
  • 1/4-1/2 packet of Orange, Citrus or Plain LMNT

 

Directions

  1. Add all the ingredients to a high speed blender and blend on high. If your child has a texture aversion, pour the blended mixture through a mesh colander to remove some of the strawberry seeds.
  2. Pour the blended mixture into popsicle molds, leaving a small space at the top to allow for expansion as the popsicles freeze. If you don't have popsicle molds, you can use small paper cups or ice cube trays instead. Insert popsicle sticks or wooden skewers into the center of each mold.
  3. Place the filled popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid. For best results, it's recommended to freeze them overnight.
  4. Once the popsicles are fully frozen, remove them from the molds by running warm water over the outside of the molds for a few seconds to loosen them. Gently pull the popsicles out and enjoy your delicious and healthy homemade treats!

Tip: Add a handful of spinach or kale to sneak in some extra greens and boost the nutritional value of your popsicles.
