1/4 cup of chia seeds

1 1/2 cups of unsweetened vanilla almond milk, plus more if needed

Vanilla protein powder containing 20-30 grams protein

1 tablespoon nut butter (I use almond or cashew)

Place the chia seed in a mason jar (or other glass container with screw-on lid).

Place the almond milk, protein powder, and nut butter in a high speed blender and blend, then pour the mixture over the chia seeds and screw the lid on tight. Shake well to mix.

Refrigerate for 20-minutes, then shake lightly again and taste. If the pudding is congealed but the chia seeds are still crunchy, add 2 more tablespoons almond milk, stir to incorporate, and return to the refrigerator until you’re ready to eat. You’re more likely to need this added step if you use a plant-based protein powder.
