Matcha Protein Chia Seed Pudding

Matcha Chia Seed Pudding is a green way to start your day. Matcha contains the phytochemicls EGCG, which increases the production of glutathione, one of our most potent antioxidants.

Gearing up for the back to school over here with a quick, high-protein make ahead breakfast for mom. I am all about whipping up easy breakfasts to hit your protein goals. This Matcha Chia pudding is loaded with protein, fat, fiber and greens, making it the perfect grab and go option for busy Monday mornings.

Make this the night ahead (or prep them for the whole week!), pop them in the fridge, and you'll have a tasty, protein-filled breakfast waiting for you in the morning. These are totally sugar-free, rock my Levels CGM ratings with a 9/10, support regularity, and keep my fueled and full all the way until lunch time.

Ingredients

Optional Toppings:

  • 1/4 cup fresh or frozen berries
  • 1 tablespoon of coconut cream

Directions

  1. Blend together coconut milk, matcha and protein powder in a high speed blender.
  2. Add 1/4 cup chia seeds to a small jar. Pour the mixture over the chia seeds and stir to combine. Seal and place in the fridge. After 20 minutes, shake lightly to remix the chia seeds and return to the refrigerator.
  3. The pudding will be ready in 1-2 hours but will have the best consistency if you leave it overnight. 
  4. In the morning, mix up the chia pudding and top with berries and coconut cream, or just take them in the car for drop off!
