No Bake Sugar-Free Protein Paleo Patties

Who doesn't love a no-bake recipe that's quick and easy, and easy on your blood sugar? When you make treats at home, you have complete control over the ingredients you use. That's why I love to incorporate my Be Well by Kelly Grass-fed Protein Powder into desserts - not only are you able to minimize your sugar intake, but you're getting the added benefits of a clean, collagen-rich complete protein! Paired with low-glycemic options like coconut flour and healthy fats from almond butter, the Paleo Patties hits all the marks as a Fab Four treat that supports blood sugar balance.

Eating healthy doesn't have to be boring. Have fun experimenting in the kitchen with different topping variations!

  1. For a hard chocolate topping, melt your favorite dark chocolate bar or chips. I recommend using Hu Kitchen as a sugar-free option, mixed with melted coconut oil and sprinkle on some Maldon salt.
  2. Mix together Be Well by Kelly Chocolate protein and melted coconut oil and nut butter for an extra protein boost.
  3. You can make them blondies and skip the chocolate topping.

Ingredients

Base:

  • 2 cups of almond butter
  • 1/2 cup shredded unsweetened coconut  - from NOW Foods
  • 1/4 cup coconut flour (almond flour works too!)
  • 1/4 cup coconut oil
  • 1/3 cup Be Well by Kelly Vanilla Protein (or sweeten it with 1/4 cup maple syrup)

Chocolate Topping:

Directions

  1. Add 1 scoop of Be Well By Kelly Vanilla protein powder, almond butter, shredded coconut, coconut flour, and coconut oil to a food processor. Blend on high to create a smooth consistency for your base. 
  2. Pour the mixture into silicone molds for freezing. Freeze the mixture for about 15 minutes while you create the chocolate topping.
  3. For the chocolate topping, melt your favorite chocolate bar or chips and melted coconut oil, or mix melted coconut oil and Be Well by Kelly Chocolate Protein Powder. If you like it a little more creamy you can mix in 1 tbsp almond butter to the topping too. Pour the chocolate topping on top of each pattie and place back into to the freezer for another 15 minutes to set. Top with a dash of sea salt and enjoy!
