Be Well Lazy Lasagna | One-Pan Dinner with 50g+ of Protein

Ingredients

  • 1lb grass-fed ground beef
  • 1-2 tbsp extra virgin olive oil - I use Kosterina (use code BEWELL)
  • 1 jar marinara sauce - I use Primal Kitchen (use code KELLYSFAVORITES)
  • 1 box pasta of choice - I use Chef’s Kiss Protein Rotini (use code BEWELLBYKELLY)
  • 1-2 cups spinach
  • 1 zucchini, chopped
  • 1 cup cottage cheese (or vegan ricotta)
  • 1 cup mozzarella cheese (or vegan Mozzarella)

Directions

  1. Heat a drizzle of olive oil in a large, heavy-bottomed skillet over medium heat. Add ground beef (or your preferred protein) and cook until about halfway browned.
  2. Pour in your favorite marinara sauce and stir to combine. Let it simmer for a few minutes to allow the flavors to meld.
  3. Stir in cooked Chef’s Kiss plant-based rotini directly into the sauce and stir to combine. Reduce the heat to a gentle simmer.
  4. Spoon dollops of whipped cottage cheese, ricotta cheese or vegan ricotta into the pasta.
  5. Gently fold in fresh spinach and chopped zucchini. Allow the spinach to wilt into the warm sauce.
  6. Sprinkle with shredded mozzarella (dairy or non-dairy) and transfer the skillet under the broiler for 2–4 minutes, until the cheese is golden and bubbly.
  7. Serve immediately, garnished with fresh basil if desired.
